Local chefs John Parsons and Simon Foster will be taking over the Open House kitchen for the day, cooking iconic West African dishes such as Shakshuka, Bus Station Kefta (spiced lamb meatballs simmered in a tomato sauce with poached eggs), Egusi (vegan tofu and spinach stew), Yassa (lemon-marinated chicken), Jollof Rice, goat or vegan chickpea & lentil curry, flat breads, and fried plantain. Our pop-up bar will also be open serving hibiscus margarita cocktails, mocktails and more.
